Perfectly paired wine and chocolate makes for a decadent Valentine
Life should be enjoyed and celebrated with the people we love every chance we get. And with Valentine’s Day right around the corner, nothing says "I love you" better than a gift of wine and chocolate.
Most people don’t know that wine and chocolate are natural companions. Both have complex flavours and notes, and pair together beautifully.
When selecting a wine, it’s important to consider the type of chocolate you are pairing it with. For dark, bittersweet and semi-sweet chocolates, the wine should be more intense and full-bodied — think Zinfandel or Syrah. With milk and white chocolate, lighter-bodied wines work beautifully to accentuate the flavour. A Pinot Noir or Merlot are good choices.
My personal suggestion is to pair a Ghost Pines 2009 Merlot with a high-quality milk chocolate. On the nose, this Merlot is juicy and chocolaty with mixed floral notes, vanilla and hints of caramel, along with lush, ripe plum and blackberry fruit flavours, and it will mingle well with the smoothness of the chocolate.
